INGREDIENTS
Burrito
- 4 oz of Fallen Fruit salsa
- 4 large eggs
- Salt and pepper to taste
- 1 tablespoon butter or cooking oil
- 4 large flour tortillas
- 1 cup shredded cheese (cheddar, Monterey Jack, or your favorite)
Toppings (optional)
- Sliced avocado
- Diced tomatoes
- Chopped cilantro
- Sour cream
- Chorizo
DIRECTIONS
Eggs
- Crack the eggs into a bowl, season with salt and pepper, and whisk until well combined
- Heat the butter or oil in a large skillet over medium heat
- Once hot, pour in the beaten eggs and let them cook without stirring for a minute or so until they start to set on the bottom
- Gently stir the eggs with a spatula, pushing them from the edges towards the center, until they are scrambled and cooked to your desired consistency and remove from heat
Tortillas
- Warm the flour tortillas, you can do this by wrapping them in a damp paper towel and microwaving for 20-30 seconds or by heating them briefly on a skillet or griddle
Assemble the burritos
- Lay a warm tortilla on a flat surface
- Spoon a quarter of the scrambled eggs onto the center of the tortillas
- Sprinkle a generous amount of shredded cheese over the eggs
- Spoon Fallen Fruit salsa over the cheese layer
- Optional: Add any optional toppings such as sliced avocado, diced tomatoes, or chopped cilantro
- Fold the sides of the tortilla over the filling, then roll it up tightly from the bottom to encase the fillings
Repeat with the remaining tortillas and filling ingredients
Serve the breakfast burritos immediately, or wrap them in foil to keep warm until ready to eat
