Awakening Flautas

INGREDIENTS
Flautas
- 1 cup shredded cheese (such as Monterey Jack or Cheddar)
- 12 small corn tortillas
- Vegetable oil, for frying
- The Awakening
Optional Garnish
- Sour cream
- Guacamole
- Shredded lettuce
- Diced tomatoes
- Chopped green onions
DIRECTIONS
Assemble the Flautas
- Warm the tortillas slightly in the microwave or on a skillet to make them pliable
- Place about 2 tablespoons of the cheese onto each tortilla and roll it up tightly into a flute shape. Secure the seam with toothpicks, if necessary, to prevent them from unraveling
Fry the Flautas
- In a large skillet, heat about 1/2 inch of vegetable oil over medium-high heat until hot but not smoking
- Carefully place the flautas seam side down into the hot oil, in batches if necessary to avoid overcrowding the skillet
- Fry the flautas on each side for 2-3 minutes, or until golden brown and crispy. Use tongs to turn them gently
- Once fried, transfer the flautas to a plate lined with paper towels to drain excess oil
Serve
- Serve the flautas hot with The Awakening salsa and your choice of toppings such as sour cream, guacamole, shredded lettuce, diced tomatoes, chopped green onions, etc…
