INGREDIENTS
Meatballs
- 4 oz of Fallen Fruit salsa
- 1 lb of ground turkey
- 1 egg
- 1/2 tsp Himalayan salt
- 1 tsp ground pepper
- 2 tsp garlic powder
- 3/4 cup panko or regular bread crums
- 1/4 cup parmesan cheese
Quinoa
- 1 cup quinoa, rinsed
- 1 3/4 cups vegetable broth
- 1/4 red bell pepper diced (small)
- 1/4 yellow bell pepper diced
- 1/4 orange bell pepper diced
- 1/4 green bell pepper diced
DIRECTIONS
Meatballs
- In a small bowl lightly whisk the egg
- Using your hands in a medium bowl mix all the ingredients until evenly combined
- Let the meatball mixture rest for five minutes to allow the breadcrumbs to soften
- Divide and shape the meat into about 25 meatballs
- Bake the meatballs for about 15 minutes at 400°F on an air fryer or a regular oven
- Take the meatballs out and pour some more Fallen Fruit salsa on top of each meatball
- Bake the meatballs for 5 more minutes
Quinoa
- On a medium pot combine the quinoa, vegetable broth and diced peppers
- Bring to a boil, cover, reduce the heat, and simmer for 15 minutes
- Remove from the heat and let it sit, covered for 10 more minutes
