Underworld Shrimp Tacos
This recipe goes well with any of our salsas

INGREDIENTS
Red Vegetable Slaw
- 4 oz of an Underworld Feast salsa of your choice
- 3 Tbsp of Unsalted Butter
- 1 Tbsp of Tomato Paste
- 1 medium Onion, thinly sliced
- 1 medium Tomato, thinly sliced
- 4 cloves of Garlic, chopped
Underworld Shrimp
- 1/4 lb of pre-cooked medium to large Shrimp
- Salt and Black Pepper to taste
Quesadilla Base
- 3 Tortillas (corn or flour)
- 1 Cup of Cheese of your choice
Guac Garnish (optional)
- 1 medium Avocado
- 1 Tbsp of Avocado or Olive Oil
- 1 Tbsp of chopped Cilantro
- 1 Tsp of Salt
- 1 Lime
- 1-2 Tsp of Black Pepper
DIRECTIONS
Red Vegetable Slaw
- Heat the butter in a large skillet over medium heat
- Once the butter melts and bubbles, add the onions and tomatoes until wilted (about 4 minutes)
- Stir in the garlic and cook until lightly browned and fragant (about 1 minute)
- Add 4 ounces of your Underworld Feast salsa of choice, Tomato Paste, and Salt & Black Pepper to taste
- If your slaw starts drying up, add a couple tablespoons of water to rehydrate
Underworld Shrimp
- Add the shrimp until they are cooked through (about 1 to 2 minutes)
- Move the slaw and shrimp filling to a bowl so it doesn’t overcook
Quesadilla Base
- Heat up some tortillas on a skillet
- Add 1/3 of your cheese of choice to make a simple quesadilla base
- Add about 2 tablespoons of your slaw and shrimp filling to the quesadilla, fold in half and flip frequently until the cheese has melted
Guac Garnish
- Cube the avocado into 1/2 inch cubes
- Place your avo cubes in a bowl and drizzle with the juice of one Lime and the Avocado/Olive Oil
- Toss and sprinkle the Salt and Black Pepper
- Top with the chopped Cilantro
