INGREDIENTS
Eden’s Omelete
- 3 Large eggs
- 1 Cup of Baby Spinach leaves
- 2 Tbsp of grated Feta Cheese
- 2 Tbsp of Milk
- Salt and Pepper to taste
Garnish
- 3 Tbsp of “Queso Fresco”, “Cotija Cheese”, or “Feta Cheese”
DIRECTIONS
Eden’s Omelete
- Beat eggs in a bowl and stir in milk, add the baby spinach while beating
- Season with salt and pepper
- Spray a small skillet with cooking spray and heat over medium heat
- Once warm, add the egg mixture and cook until partially set (about 3 minutes)
- Flip with a spatula and continue cooking (2 to 3 minutes)
- Sprinkle the feta cheese over the omelet
- Reduce heat to low and continue to cook (2 to 3 minutes)
- Fold in half and pour Eden’s Garden salsa on top of the omelet
- Garnish the omelet with avocado (optional)
