Eden’s Avo Hummus

INGREDIENTS
Hummus
- 1 ripe avocado
- 1 can (15 ounces) chickpeas (garbanzo beans), drained and rinsed
- 1 jar (8 oz) of Eden’s Garden salsa
- Optional garnishes: drizzle of avo oil, sprinkle of paprika or cayenne pepper, chopped fresh cilantro, drizzle of lime
DIRECTIONS
Hummus
- Start by preparing the avocado. Cut the avocado in half lengthwise, remove the pit, and scoop out the flesh into a food processor or blender
- Add the drained and rinsed chickpeas, and Eden’s Garden salsa to the food processor or blender with the avocado
- Blend the ingredients until smooth and creamy, scraping down the sides of the bowl as needed to ensure everything is well incorporated. If the mixture is too thick, you can add a tablespoon or two of water to achieve your desired consistency
- Once the hummus is smooth and well seasoned, transfer it to a serving bowl
- If desired, garnish the avocado hummus with a drizzle of olive oil, a sprinkle of paprika or cayenne pepper for added heat, chopped fresh cilantro or parsley for freshness
- Serve the hummus with your favorite dippers, such as vegetable sticks, pita bread, tortilla chips, or crackers
