Awakening Flautas

INGREDIENTS

Flautas
  • 1 cup shredded cheese (such as Monterey Jack or Cheddar)
  • 12 small corn tortillas
  • Vegetable oil, for frying
  • The Awakening
Optional Garnish
  • Sour cream
  • Guacamole
  • Shredded lettuce
  • Diced tomatoes
  • Chopped green onions

DIRECTIONS

 

Assemble the Flautas
  1. Warm the tortillas slightly in the microwave or on a skillet to make them pliable
  2. Place about 2 tablespoons of the cheese onto each tortilla and roll it up tightly into a flute shape. Secure the seam with toothpicks, if necessary, to prevent them from unraveling
Fry the Flautas
  1. In a large skillet, heat about 1/2 inch of vegetable oil over medium-high heat until hot but not smoking
  2. Carefully place the flautas seam side down into the hot oil, in batches if necessary to avoid overcrowding the skillet
  3. Fry the flautas on each side for 2-3 minutes, or until golden brown and crispy. Use tongs to turn them gently
  4. Once fried, transfer the flautas to a plate lined with paper towels to drain excess oil
Serve
  1. Serve the flautas hot with The Awakening salsa and your choice of toppings such as sour cream, guacamole, shredded lettuce, diced tomatoes, chopped green onions, etc…
