Watch your tortillas as much as you watch your eggs.

INGREDIENTS

The Eggs
  • 3 ounces of The Divine
  • 3 ounces of The Genesis
  • 2 Tsp of Avocado Oil
  • 2 Eggs

 

Base and Garnishes
  • 4 Small Tortillas
  • 1/3 Cup of Cilantro
  • 1/4 Cup of Feta Cheese
  • 1/4 Cup of Red Onion
  • 1/4 Cup of Lime Juice

DIRECTIONS

 

Eggs and the Rest
  1. Heat up the tortillas over medium heat and set aside
  2. Drizzle some avocado oil and fry your eggs (season with salt)
  3. Cook until the whites are set and the yolks are still runny (about 3-4 minutes)
Plating
  1. Place two warm tortillas on your plate, followed by an egg on each tortilla
  2. Spoon The Springtide salsa over one egg and The Divine over the other egg
  3. Garnish with your choice of crumbled cheese, sliced Red Onion, and Cilantro
