INGREDIENTS

Eden’s Omelete
  • 3 Large eggs
  • 1 Cup of Baby Spinach leaves
  • 2 Tbsp of grated Feta Cheese
  • 2 Tbsp of Milk
  • Salt and Pepper to taste

 

Garnish
  • 3 Tbsp of “Queso Fresco”, “Cotija Cheese”, or “Feta Cheese”

DIRECTIONS

 

Eden’s Omelete
  1. Beat eggs in a bowl and stir in milk, add the baby spinach while beating
  2. Season with salt and pepper
  3. Spray a small skillet with cooking spray and heat over medium heat
  4. Once warm, add the egg mixture and cook until partially set (about 3 minutes)
  5. Flip with a spatula and continue cooking (2 to 3 minutes)
  6. Sprinkle the feta cheese over the omelet
  7. Reduce heat to low and continue to cook (2 to 3 minutes)
  8. Fold in half and pour Eden’s Garden salsa on top of the omelet
  9. Garnish the omelet with avocado (optional)
