Feel free to customize this recipe by adding or substituting your favorite vegetables!

INGREDIENTS

Vegetables and seasoning
  • 6 tbsp Lost Soul salsa
  • 2 tbsp Dante’s Choice salsa
  • 1 large red bell pepper, cut into julienne slices
  • 3 heirloom carrots, cut into chunks
  • 1 large corn, but into 4 pieces
  • 1 medium red onion, chopped into chunks
  • 2 medium zucchinis, sliced into rounds or chunks
  • 1 pint cherry tomatoes
  • 3 tablespoons olive oil

DIRECTIONS

 
Preheat the Oven
Preheat your oven to 425°F (220°C) and line a large sheet pan with parchment paper or aluminum foil for easier cleanup
Prepare the Vegetables
In a large mixing bowl, combine the vegetables  
Season the Vegetables
Drizzle the olive oil over the vegetables and pour the Lost Soul and Dante’s Choice salsas, then toss the vegetables until they are evenly coated with the oil and the salsas  
Arrange on the Sheet Pan
Spread the seasoned vegetables out in a single layer on the prepared sheet pan, making sure they are evenly distributed  
Roast in the Oven
Place the sheet pan in the preheated oven and roast the vegetables for 20-25 minutes, or until they are tender and starting to caramelize around the edges. You can stir the vegetables halfway through the cooking time for even browning  
Serve
Once the vegetables are roasted to your liking, remove them from the oven and transfer them to a serving platter
