You can substitute the pork for chicken if you’re not a big pork fan.
INGREDIENTS
Lost Soul Pork
- 8 oz of Lost Soul salsa
- 1 lb of Pork Tenderloin or Chicken Breasts
- 1/4 Cup of Water
Roasted Fingerling Potatoes
- 1/2 lb of Fingerling Potatoes
- 1 Tsp of Himalayan Salt
- 1 Tsp of Black Pepper
- 1 Tsp of Avocado Oil
- 1 Tsp of Paprika (optional)
Red Onion Garnish
- 1 Medium Red Onion
- 1/4 Cup of Apple Cider Vinegar
- 1/2 Cup of Lime Juice
- 1/4 Cup of Water
- 1 Tsp Powder Sugar
INGREDIENTS
Chipotle Slaw
- 1 Handful of Lettuce or Cabbage
- 1/3 Cup of Mayonnaise
- 1/4 Cup of Chipotle Sauce
- 3 oz of Diced Dill Pickles
Rolls
- 12 Brioche-style butter rolls
- 1 Tsp of Unsalted Butter
DIRECTIONS
Lost Soul Pork
- Pour the water on the bottom of the instant pot or crockpot dish
- Place the Pork Tenderloin or Chicken Breasts and pour 7 ounces of Lost Soul salsa on top of the pork
- Press the meat/stew button (if using a crockpot, cook on high for 4 hours)
- Shred the pork once it’s done and has cooled down a bit
Roasted Fingerling Potatoes
- Preheat the oven to 450 degrees
- Slice the Fingerling Potatoes lengthwise
- Toss the potatoes with the ingredients
- Roast the potatoes in the oven for 25-30 minutes
DIRECTIONS
Red Onion Garnish
- Thinly slice the Red Onion
- Mix with the rest of the ingredients
- Microwave for 90 seconds
Chipotle Slaw
- Dice the Dill Pickles
- Mix the ingredients in a small bowl
Rolls
- Melt the butter in the microwave for 20-25 seconds
- Lightly brush the rolls with the melted butter
- Place the rolls in the oven when the potatoes are 5 minutes away from being done
