Aren't you tired of regular breakfast eggs? Try two with two different salsas — you won't regret it.

(Tips for this recipe: Watch your tortillas as much as you watch your eggs.)

Ingredients

The Eggs

  • 3 oz of The Divine salsa
  • 3 oz of The Genesis salsa
  • 2 tsp avocado oil
  • 2 eggs

Base and Garnishes

  • 4 small tortillas
  • 1/3 cup cilantro
  • 1/4 cup feta cheese
  • 1/4 cup red onion
  • 1/4 cup lime juice

Directions

Eggs

  1. Heat up the tortillas over medium heat and set aside.
  2. Drizzle avocado oil in a pan and fry your eggs, seasoning with salt.
  3. Cook until the whites are set and the yolks are still runny, about 3–4 minutes.

Plating

  1. Place two warm tortillas on your plate with an egg on each.
  2. Spoon one salsa over one egg and the other salsa over the second egg.
  3. Garnish with crumbled feta, sliced red onion, and cilantro.
