1 cup shredded cheese (Monterey Jack or Cheddar)

12 small corn tortillas

Vegetable oil, for frying

Directions
Assemble the Flautas

Warm the tortillas slightly in the microwave or on a skillet to make them pliable.

Place about 2 tablespoons of shredded cheese onto each tortilla and roll tightly into a flute shape. Secure the seam with a toothpick if needed.
Fry the Flautas

In a large skillet, heat about 1/2 inch of vegetable oil over medium-high heat until hot but not smoking.

Place the flautas seam side down into the hot oil in batches to avoid overcrowding.

Fry for 2–3 minutes per side until golden brown and crispy, turning gently with tongs.

Transfer to a paper towel-lined plate to drain excess oil.
