An easy and quick "working-from-home" meal. You might go for seconds with this one.

(Tips for this recipe: More salsa equals better.)

Ingredients

Chilaquiles

  • 4–5 oz of Eden's Garden salsa
  • 6–8 oz fried tortilla chips
  • 3 tbsp mashed black or pinto beans

Base

  • 3 tbsp mashed black or pinto beans
  • 1/2 lime

Garnish

  • 1/4 cup sliced onions
  • 1/4 cup cilantro
  • 1/2 cup queso fresco, cotija cheese, or feta
  • 1/4 cup Mexican crema or sour cream

Directions

  1. Heat up the mashed beans.
  2. Slice the onions and chop the cilantro.
  3. Heat up the Eden's Garden salsa.
  4. Spread the beans on a plate.
  5. Top with fried tortilla chips.
  6. Pour Eden's Garden salsa over the chips.
  7. Garnish with sliced onions.
  8. Sprinkle crumbled cheese and cilantro.
  9. Drizzle with crema and a squeeze of lime.
